These yummy Blueberry Pierogi are a perfect summer treat! Being Polish, my friends always ask me to make them. Trust me when I say, they are AMAZING. Make sure to always use high-quality ingredients if you can!

Blueberry Pierogi recipe

Ingredients

4 Servings
(1 serving = 3-4 pierogi)

Dough

  • 3cups
    flour
  • 1
    egg
  • 2tbsp
    oil
  • 1tsp
    salt
  • 1/2cup
    warm water

Filling and Topping

  • 1cup
    blueberries
  • 1/2tsp
    sugar
  • 1/2cup
    sour cream
  • 2tbsp
    sugar

How to make Blueberry Pierogi

Prepare the Dough

  1. On a clean surface, create a well in the flour.

  2. Add the egg, oil, and salt.

  3. Gradually mix in warm water until the dough is soft and not sticky. Add more water if needed.

  4. Knead well until the dough is soft and no longer sticky and let rest for 30 minutes.

Assemble the Pierogi

  1. Roll out the dough and cut circles with a glass.

  2. Fill each circle with blueberries and sugar.

  3. Fold into half-moons and seal tightly.

Cook the Pierogi

  1. Pop them into the freezer while you wait for your water to boil. Salt your water well.

  2. Drop your pierogi in one by one into the boiling water.

  3. Once they float, cook for 1 more minute, then scoop out.

Serve

  1. In a bowl, mix sour cream with sugar and drizzle over the pierogi.
