A traditional Filipino breakfast dish featuring sweet and savory marinated pork belly.
Ingredients
Marinade
- 1cupSprite
- 1/2cupsoy sauce
- 1/4cupvinegar
- 1tspsalt
- 1tspblack pepper
- 1tspgarlic powder
- 1tsponion powder
- 1tsppaprika
- 1/4cuptomato ketchup
Pork
- 2lbpork belly, thinly sliced
How to make Pork Tocino
Prepare the Marinade
In a large bowl, combine the Sprite, soy sauce, vinegar, salt, black pepper, garlic powder, onion powder, paprika, and tomato ketchup. Mix well to ensure all ingredients are thoroughly combined.
Marinate the Pork
Add the thinly sliced pork belly to the marinade, making sure each piece is well coated with the mixture.
Cover the bowl with plastic wrap or transfer the pork and marinade to a resealable plastic bag.
Marinate in the refrigerator for at least 4 hours, but preferably overnight for the best flavor.
Cook the Pork Tocino
Heat a large skillet over medium heat. Add the marinated pork belly along with the marinade.
Bring the mixture to a boil, then reduce the heat to low and let it simmer.
Cook the pork until the liquid evaporates and the pork starts to caramelize, stirring occasionally to prevent burning. This should take about 20-30 minutes.
Fry the Pork Tocino
Once the liquid has evaporated and the pork is caramelized, you can add a small amount of oil to the skillet (if needed) to help the pork achieve a crispy texture.
Continue to cook until the pork is browned and slightly crispy, turning occasionally.
Serve
Transfer the cooked pork tocino to a serving dish.
Serve hot with steamed rice and a side of pickled vegetables or a fried egg for a traditional Filipino breakfast.
Tips & Tricks
For best results, marinate the pork overnight to allow the flavors to fully develop.
Adjust the sweetness by adding more or less Sprite according to your taste preference.
