Rich and flavorful brownie bites infused with espresso, perfect for a sweet treat or dessert.
Ingredients
- 1/2cupunsalted butter, melted
- 1cupgranulated sugar
- 2piecelarge eggs
- 1tspvanilla extract
- 1/4cupbrewed espresso or strong coffee
- 1/3cupcocoa powder
- 1/2cupall-purpose flour
- 1/4tspsalt
- 1/2cupchocolate chips
- 1/4cupchopped walnuts or pecans (optional)
How to make Mocha Espresso Brownie Bites
Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini paper liners.
In a large mixing bowl, combine the melted butter and granulated sugar. Whisk together until the mixture is smooth and creamy.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and brewed espresso until fully incorporated.
Sift in the cocoa powder, all-purpose flour, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
Fold in the chocolate chips and, if using, the chopped walnuts or pecans.
Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Allow the brownie bites to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Tips & Tricks
For a more intense coffee flavor, use espresso instead of regular coffee.
Ensure not to overmix the batter to keep the brownie bites tender.
