Crispy Fried Chicken

Ingredients
Marinade
- 1/4cupcalamansi or lemon juice
- 1/2cupsoy sauce
- 1head garlic, peeled and minced
- 1tspsalt
- 1/2tsppepper
- 3lbchicken legs or thighs
Coating
- 3/4cupflour
- 1/4cupcorn starch
- 1tbspbaking powder
For Frying
- 2incanola oil
How to make Crispy Fried Chicken
Marinating the Chicken
In a bowl, combine chicken, calamansi juice, soy sauce, garlic, ½ teaspoon of the salt, and ¼ teaspoon of the pepper. Marinate in the refrigerator for about 2 to 4 hours.
Preparing the Coating
Drain chicken from marinade and pat dry.
In a shallow dish, combine flour, corn starch, baking powder, and the remaining ½ teaspoon salt and ¼ teaspoon pepper. Whisk well.
Dredge chicken in flour mixture to fully coat.
Frying the Chicken
In a wide, thick-bottomed pan over medium heat, heat about 2 inches deep of oil to 350°F.
Add chicken in batches and cook, turning on sides, until golden brown, crisp, and cooked through.
Remove from pan and drain.
Tips & Tricks
Ensure the oil is at the correct temperature before adding the chicken to achieve a crispy texture.
Do not overcrowd the pan when frying to maintain the oil temperature.
