Ingredients

Marinade

  • 1/4cup
    calamansi or lemon juice
  • 1/2cup
    soy sauce
  • 1
    head garlic, peeled and minced
  • 1tsp
    salt
  • 1/2tsp
    pepper
  • 3lb
    chicken legs or thighs

Coating

  • 3/4cup
    flour
  • 1/4cup
    corn starch
  • 1tbsp
    baking powder

For Frying

  • 2in
    canola oil

How to make Crispy Fried Chicken

Marinating the Chicken

  1. In a bowl, combine chicken, calamansi juice, soy sauce, garlic, ½ teaspoon of the salt, and ¼ teaspoon of the pepper. Marinate in the refrigerator for about 2 to 4 hours.

Preparing the Coating

  1. Drain chicken from marinade and pat dry.

  2. In a shallow dish, combine flour, corn starch, baking powder, and the remaining ½ teaspoon salt and ¼ teaspoon pepper. Whisk well.

  3. Dredge chicken in flour mixture to fully coat.

Frying the Chicken

  1. In a wide, thick-bottomed pan over medium heat, heat about 2 inches deep of oil to 350°F.

  2. Add chicken in batches and cook, turning on sides, until golden brown, crisp, and cooked through.

  3. Remove from pan and drain.
