Ingredients

    yam, peeled and cut into cubes
  • 1piece
    onion, finely chopped
  • 2piece
    tomatoes, chopped
  • 2clove
    garlic, minced
  • 1tsp
    ginger paste
  • 1tsp
    ground cayenne pepper (optional)
  • 1tsp
    ground crayfish (optional)
  • 2cups
    vegetable or chicken broth
  • 1cup
    spinach or any leafy greens, chopped
  • Salt to taste
  • Vegetable oil for frying

How to make Yam Porridge

  1. In a large pot, heat some vegetable oil over medium heat. Add the onions and sauté until translucent.

  2. Add the minced garlic and ginger paste to the pot and sauté for another minute.

  3. Add the chopped tomatoes, cayenne pepper, and crayfish (if using) to the pot. Cook until the tomatoes have softened and released their juices.

  4. Add the yam cubes to the pot and mix well with the tomato mixture.

  5. Pour in the vegetable or chicken broth, ensuring that the yam is fully submerged. If needed, add more broth or water to cover the yam.

  6. Season with salt to taste and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the yam is tender.

  7. Stir in the chopped spinach or leafy greens and cook for an additional 5 minutes until wilted.

  8. Remove from heat and let it rest for a few minutes before serving.
