A delicious Ghanaian Yam Porridge that is hearty and flavorful, perfect for a comforting meal.
Ingredients
- 500gyam, peeled and cut into cubes
- 1pieceonion, finely chopped
- 2piecetomatoes, chopped
- 2clovegarlic, minced
- 1tspginger paste
- 1tspground cayenne pepper (optional)
- 1tspground crayfish (optional)
- 2cupsvegetable or chicken broth
- 1cupspinach or any leafy greens, chopped
- Salt to taste

How to make Yam Porridge
In a large pot, heat some vegetable oil over medium heat. Add the onions and sauté until translucent.
Add the minced garlic and ginger paste to the pot and sauté for another minute.
Add the chopped tomatoes, cayenne pepper, and crayfish (if using) to the pot. Cook until the tomatoes have softened and released their juices.
Add the yam cubes to the pot and mix well with the tomato mixture.
Pour in the vegetable or chicken broth, ensuring that the yam is fully submerged. If needed, add more broth or water to cover the yam.
Season with salt to taste and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the yam is tender.
Stir in the chopped spinach or leafy greens and cook for an additional 5 minutes until wilted.
Remove from heat and let it rest for a few minutes before serving.

For a richer flavor, you can use chicken broth instead of vegetable broth.
