Palak Soup with Corn recipe

Ingredients

Main Ingredients

  • 200g
    palak (spinach)
  • 150g
    corn
  • 1
    onion
  • 2clove
    garlic
  • 1tbsp
    olive oil
  • 500mL
    vegetable broth
  • 1tsp
    salt
  • 1tsp
    pepper

How to make Palak Soup with Corn

Preparation

  1. Wash the palak thoroughly and chop it coarsely.

  2. Finely chop the onion and garlic.

Cooking

  1. In a pot, heat olive oil over medium heat.

  2. Add the chopped onion and garlic, sauté until translucent.

  3. Add the chopped palak and corn, and cook for a few minutes.

  4. Pour in the vegetable broth and bring to a boil.

  5. Reduce heat and let it simmer for about 10 minutes.

  6. Blend the soup until smooth and season with salt and pepper.

Tips & Tricks

  1. You can add a splash of lemon juice for extra flavor.

  2. Serve hot with a drizzle of olive oil on top.
