How to make Palak Soup with Corn
Preparation
Wash the palak thoroughly and chop it coarsely.
Finely chop the onion and garlic.
Cooking
In a pot, heat olive oil over medium heat.
Add the chopped onion and garlic, sauté until translucent.
Add the chopped palak and corn, and cook for a few minutes.
Pour in the vegetable broth and bring to a boil.
Reduce heat and let it simmer for about 10 minutes.
Blend the soup until smooth and season with salt and pepper.
