- 1cuppoha (flattened rice)
- 1tbspoil
- 1tspmustard seeds
- 1tspcumin seeds
- 1pieceonion, chopped
- 1piecegreen chili, chopped
- 1piececarrot, grated
- 1/2cuppeas
- 1/2cupcapsicum, chopped
- 1/2tspturmeric powder
- 1tspsalt
- 1tbsplemon juice
- 2tbspcoriander leaves, chopped
How to make Healthy Vegetable Poha
Preparation
Rinse the poha in water and drain it well. Set aside.
Cooking
Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
Add chopped onions and green chili. Sauté until the onions turn translucent.
Add grated carrot, peas, and chopped capsicum. Cook for a few minutes until the vegetables are tender.
Add turmeric powder and salt. Mix well.
Add the rinsed poha and mix gently to combine with the vegetables.
Cook for a couple of minutes, then turn off the heat.
Add lemon juice and chopped coriander leaves. Mix well before serving.
Tips & Tricks
Ensure the poha is not soaked for too long to avoid it becoming mushy.
You can add other vegetables like potatoes or tomatoes for variation.
