Ingredients
- 2lbchicken (cut into serving pieces)
- 1/2cupsoy sauce
- 1/2cupvinegar (preferably cane vinegar)
- 1cupwater
- 1piecemedium onion (sliced)
- 4clovegarlic (minced)
- 2piecebay leaves
- 1tspblack peppercorns
- 1 1/2tbspcooking oil
- 2piecepotatoes (peeled and quartered, optional)
- Salt and pepper to taste
How to make Chicken Adobo
Marinate the Chicken
In a bowl, combine the chicken, soy sauce, garlic, and bay leaves. Marinate for at least 30 minutes or up to overnight for best flavor.
Sauté
In a large pan or pot, heat cooking oil over medium heat. Add the sliced onions and sauté until softened.
Brown the Chicken
Add the marinated chicken (reserve the marinade) and cook until lightly browned on all sides.
Add Vinegar
Pour in the vinegar and let it simmer without stirring for about 2-4 minutes. This helps cook off the strong vinegar taste.
Add the Sauce
After simmering, add the reserved marinade and water to the pan. Bring to a boil.
Simmer
Lower the heat and add the black peppercorns and potatoes (if using). Cover and let it simmer for about 30-40 minutes, or until the chicken is tender and the sauce has thickened.
Season
Taste the sauce and adjust seasoning with salt and pepper if needed.
Serve
