Vegan Bryani-flavored Rice recipe

Ingredients

Instant Pot Rice

  • 1cup
    Uncooked Rice
  • 1/2cup
    Brown Lentils
  • 2cups
    Water
  • 1tbsp
    Olive oil
  • 1/2tsp
    Salt

Biryani Sauce

  • 1tbsp
    olive oil
  • 1tbsp
    biryani powder
  • 1
    big Onion, finely chopped
  • 3
    cloves Garlic, mince
  • 1tsp
    Ginger, finely chopped
  • 2
    Tomatoes, small cubes
  • 2
    Big Carrots, quartered and finely slice
  • 500mL
    Vegetable Stock
  • 100mL
    Dairy-free Cream
  • 1tbsp
    Sweet Chili Sauce
  • Handful of Parsley, chopped
  • Salt and Pepper to taste

How to make Vegan Bryani-flavored Rice

Instant Pot Rice

  1. Set the Instant Pot on Medium for 12 minutes. Make sure release valve is close before cooking.

Biryani Sauce

  1. Chop the onions, garlic, ginger, tomatoes, carrots and parsley

  2. in a large pot, heat the olive oil over medium heat.

  3. Add the Onions and sauté until they become translucent and fragrant, toss in the garlic and ginger and cook a minute more.

  4. Add in the biryani powder and sauté for about 3 minutes, if it looks like the powder is sticking to the bottom of the pot, add tomatoes and cook till it forms a paste.

  5. Add in carrots, vegetable stock and sweet chili.

  6. Cook, covered with lid for about 10 minutes until carrots are al dente.

  7. Pour in the cream and season to taste

  8. Add in the cooked rice and give it a good stir so that all the rice is covered with the sauce

  9. Let it stand for 5 minutes and mix in chopped parsley

Tips & Tricks

  1. I use the Instant Pot to cook the rice because it easy and brings down the cooking time but you can use your preferred rice cooking method.

  2. If you don't have parsley on hand, coriander is also a great substitute.
