Spinach, Ginger & Chili Pesto Spread recipe

Ingredients

8 Servings
  • 3
    handfuls Spinach
  • 3
    cloves Garlic, slivered
  • 2tsp
    Ginger, roughly chopped
  • 1
    Chili, chopped
  • 60mL
    Peanuts
  • 25mL
    Lemon Juice or Juice of a half Lemon
  • 125mL
    Oil
  • 1/2tsp
    Salt and Black Pepper

How to make Spinach, Ginger & Chili Pesto Spread

    1. Put the Garlic, Ginger, Chili and Peanuts in the food processor and pulse until its finely chopped 2. Add the Spinach, Lemon Juice, Oil, Salt and Pepper and pulse until well combined. 3. Store in a airtight container

Tips & Tricks

  1. I use a good quality Canola oil or Sunflower oil because I find that Olive oil leaves a bitter after taste

  2. This recipe I created with Peanuts because it's budget-friendly but you can also use Pine Nuts or Cashew nuts

  3. Due to the Lemon Juice in this Spinach Pesto it keeps fresh and vibrant in the fridge for up to 7 days
