This recipe can be used as entrée, canape's, cocktail or finger food. It can be made week ahead of the party and stored for later use. It can be frozen for later use, store in container and leave in freezer until used. When you need to use, thaw in freeze and heat in the oven for 10 minutes, looks and taste as freshly made.

Ingredients
- 1Puff pastry
- 1/2onion
- 80gSpinach
- 2tbspgrated chesse
- 1egg
- 1/2cupThickened cream
- salt & pepper to taste
How to make Mini Spinach Quiches
Preheat the oven to 180degC and grease the patty tin.
Chop onion finely and squeeze the liquid out of the spinach.
Saute onion add spinach & seasoning cool it.
Mix egg, cream, onion, spinach and cheese and season with salt and pepper.
Cut the pastry into rounds with a pastry cutter and push them into the patty tins.
Spoon the mixture into pastry shells.
Bake into hot oven for 15 minutes or until the egg is set.
Enjoy or cool it for later use.
