Ingredients

2 Servings
(1 serving = 1 stuffed mackerel)

Pesto Stuffing

  • 1bundle
    coriander (leaves and stems)
  • 2clove
    garlic
  • 2piece
    green chillies
  • 1piece
    green capsicum
  • 2tbsp
    butter

Fish

  • 2piece
    mackerel
  • 2piece
    pixie oranges
  • 2tbsp
    gochugaru chilli powder
  • 2tbsp
    oil

How to make Steamed Chilli Mackerel

Preparation

  1. Preheat oven and place water in a shallow baking dish. Allow to heat.

Pesto Stuffing

  1. Coarsely blend coriander (leaves and stems), garlic, green chillies, and green capsicum.

  2. Add butter and mix well.

Fish Preparation

  1. Slice pixie oranges to stuff the mackerel.

  2. Clean your mackerel, pat dry, and score as you like.

  3. Season the fish.

  4. Stuff mackerel with the butter pesto and add orange slices. Use half slices if oranges are bigger than the fish cavity.

Cooking

  1. Place fish on foil paper.

  2. Drizzle a generous amount of gochugaru chilli powder, add oil, and wrap fish individually.

  3. Place in the hot shallow water dish in the oven.

  4. Cook for 4 minutes on each side.

Serving

  1. Remove from oven and serve hot with rice.

Tips & Tricks

  1. Ensure the oven is preheated to the correct temperature before placing the fish in.

  2. Adjust the amount of gochugaru chilli powder based on your spice preference.
