Marinade

How to make Kingfish Steaks in Spicy Coconut Hawaij Sauce

Marinate the Fish

  1. In a small bowl, mix the hawaij seasoning, paprika, and salt. Add olive oil and lemon juice to create a paste.

Sear the Fish

  1. Heat a drizzle of oil on a hot griddle or pan.

  2. Sear the marinated kingfish steaks for 2-3 minutes on each side until golden. Remove from the pan and set aside.

Prepare the Curry Base

  1. In a blender, combine the garlic, ginger, and chopped red onion. Blend until smooth.

  2. In the same pan, add a bit more oil, then pour in the onion-garlic-ginger paste. Cook over medium heat until fragrant, about 3-4 minutes.

  3. Add any remaining marinade to the pan along with a bit more hawaij and paprika if desired. Stir well.

Create the Coconut Sauce

  1. Add the grated tomatoes and coconut milk to the pan, stirring to combine.

  2. Transfer the mixture to a blender and puree until smooth, then return the sauce to the pan.

Simmer with Fish

  1. Add the seared kingfish steaks back into the pan, cover, and simmer for an additional 10 minutes on low heat, letting the fish soak up the flavors of the sauce.
