Egg Roll Wraps

Ingredients
- 4piecelarge eggs
- 1/2tspdried herbs (such as parsley or oregano)
- Salt and pepper, to taste
- 4slice ham
- 2slice cheese (cheddar or mozzarella)
- 1tbspbutter or oil for cooking
- 2piecelarge flour tortillas
- 2tbspspicy garlic tomato relish (or any spicy tomato-based sauce)
How to make Egg Roll Wraps
Prepare the Egg Mixture
In a bowl, whisk together the eggs, dried herbs, salt, and pepper until smooth and well combined.
Cook the Ham and Cheese Omelette Roll
Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
Pour half of the egg mixture into the skillet, tilting the pan to spread it evenly.
As the egg starts to set, place two slices of ham on top. Carefully roll the omelette halfway, starting from one edge.
Pour the remaining egg mixture into the empty side of the skillet, allowing it to spread and cook slightly. Place a slice of cheese on this fresh layer of egg.
Roll the omelette again, this time wrapping the ham and cheese together until you form one complete roll.
Cook for another minute, allowing the cheese to melt inside, then remove from heat. Repeat this process to make a second roll.
Assemble the Wraps
Spread 1 tablespoon of spicy garlic tomato relish over each tortilla.
Place one of the cheesy ham omelette rolls in the center of each tortilla and roll the tortilla around it tightly.
Finish and Serve
Slice in half, and enjoy warm.
Tips & Tricks
For a vegetarian version, omit the ham and add more cheese or vegetables.
Use a non-stick skillet to prevent the omelette from sticking.
