How to make Chicken Ciabatta Sandwich

Make the Pea Basil Pesto

  1. Combine basil leaves, peas, Parmesan cheese, olive oil, garlic, salt, and pepper in a blender.

  2. Blend until smooth. Set aside.

Prepare the Beet, Apple & Red Onion Relish

  1. In a bowl, mix the shredded beetroot, diced apple, red onion, apple cider vinegar, and honey.

  2. Season with salt and pepper. Toss well and set aside.

Assemble the Sandwich

  1. Spread a generous layer of pea basil pesto on each ciabatta roll's bottom half.
