Relish
- 1cuproasted beets, grated
- 1pieceGranny Smith apple, grated
- 1/4cupred onion, finely grated
- 1tspsugar
- 1/4tspground cinnamon
- 1piecelime, juiced
Assembly
- 1/4cuppea-basil pesto
- 4piecebarrel bread slices, toasted
How to make Beet and Apple Relish Toasts
Prepare the Relish
In a large bowl, combine the grated roasted beets, grated green apple, and grated red onion.
Add Seasoning
Sprinkle in the sugar and ground cinnamon. Squeeze the lime juice over the mixture.
Stir well to combine, adjusting sugar or lime juice to taste if needed.
Assemble the Toast
Spread a thin layer of pea-basil pesto on each slice of toasted barrel bread.
Add a generous spoonful of the beet and apple relish on top of the pesto-covered toast.
Serve and Enjoy
