To end up with the perfect consistency, the caramel needs to be at a temperature of at least 236℉ / 113°C and no more than 240℉ / 115°C.
Once the target caramel temperature has been achieved, pour it over the shortbread and use an offset spatula to push it into all the corners and spread it out nice and even. Tap the pan a few times against the countertop to pop any bubbles.
Set aside and let cool completely for 3-4 hours.
Add salt flakes and enjoy!

FAQS
What is the best way to store homemade salted caramel candies?
To store your homemade salted caramel candies, wrap them individually in wax paper or parchment paper to prevent them from sticking together. Place them in an airtight container and keep them in a cool, dry place. They can last for up to two weeks at room temperature, or you can refrigerate them for longer freshness.
Can I make salted caramel candies dairy-free or vegan?
Yes, you can make dairy-free or vegan salted caramel candies by substituting the unsalted butter with a plant-based butter alternative and using coconut cream instead of heavy cream. Make sure to choose a sweetened condensed milk that is dairy-free, or you can make your own using coconut milk and sugar.
What are some good flavor substitutions for salted caramel candies?
If you're looking to experiment with flavors in your salted caramel candies, consider adding extracts like vanilla, almond, or even a hint of espresso for a coffee flavor. You can also mix in cocoa powder for chocolate-flavored caramels or incorporate toasted coconut for a tropical twist.
How can I tell when my caramel has reached the right temperature?
To ensure your caramel has reached the right temperature, use a candy thermometer. The ideal temperature for salted caramel is between 236℉ (113℃) and 240℉ (115℃). It may stall around 225℉ (107℃), so continue whisking until it reaches the target temperature for the perfect chewy texture.
What can I pair with salted caramel candies for a delightful treat?
Salted caramel candies pair wonderfully with a variety of beverages. Enjoy them with a cup of tea or coffee for a sweet treat. They also make a great addition to dessert platters alongside chocolate desserts, nuts, or even fresh fruit like apples for a delicious contrast.
