A delightful fusion of Filipino and Mediterranean flavors, combining tender lamb with traditional Pancit Bihon noodles.

Ingredients

For the Pancit Bihon

  • 200g
    Bihon (rice noodles)
  • 250g
    tender lamb, cut into thin strips
  • 1piece
    small onion, sliced
  • 3clove
    garlic, minced
  • 1piece
    small carrot, julienned
  • 1/2cup
    green beans, sliced diagonally
  • 1/2cup
    red bell pepper, julienned
  • 1/4cup
    soy sauce
  • 2tbsp
    oyster sauce
  • 1tbsp
    olive oil
  • 1/2piece
    lemon (for zest and juice)
  • 1tsp
    dried oregano
  • 1/2tsp
    dried rosemary
  • Salt and pepper to taste

For Garnish

  • 2
    Lemon wedges
  • Fresh parsley, chopped- handful
  • Fried garlic (optional)

How to make Lemon-Herbed Lamb Pancit Bihon - A Filipino-Mediterranean Fusion Delight

Prepare the Lamb

  1. Marinate the lamb strips with olive oil, lemon zest, oregano, rosemary, salt, and pepper. Let it sit for 15-20 minutes.

  2. In a hot pan, sear the marinated lamb until it’s tender and slightly browned. Set aside.

Cook the Bihon

  1. Soak the bihon noodles in warm water for 10 minutes or until softened. Drain and set aside.

  2. Add a little more oil if needed in the same pan used for the lamb. Sauté the onion and garlic until fragrant.

  3. Add the carrots, green beans, and red bell pepper. Cook for 3-4 minutes until they are tender but still crisp.

Combine Everything

  1. Mix well with the soy sauce and oyster sauce to the vegetables.

  2. Add the soaked bihon noodles and toss them with the sauce and vegetables until evenly coated.

  3. Return the seared lamb to the pan, mixing it gently with the noodles and vegetables. Squeeze half a lemon over the dish for a fresh, tangy flavor.

Serve

  1. Transfer the fusion Pancit Bihon to a serving plate.

  2. Garnish with lemon wedges, fresh parsley, and fried garlic if desired.
