This creative pizza with a crispy rice crust is a delicious twist on traditional pizza, making the most of leftover rice and eggs while adding a unique texture and flavor.

Ingredients

4 Servings
(1 serving = 1 slice)
  • 2cups
    leftover rice
  • 2piece
    eggs
  • 1/2cup
    shredded mozzarella cheese
  • 1/4cup
    grated Parmesan cheese
  • 1/2tsp
    garlic powder
  • 1/2tsp
    dried oregano
  • Salt and pepper to taste
  • 1/4cup
    pizza sauce
  • 1/2cup
assorted pizza toppings (pepper, olives, mushrooms, etc.)
  • Fresh basil leaves (optional)
  • Olive oil for cooking

How to make Leftover Crispy Crust Rice Pizza

  1. Preheat your oven to 400°F (200°C) and line a baking sheet or pizza pan with parchment paper.

  2. In a large bowl, grind the leftover rice slightly to break it down but not turn it into a paste. Then, mix in the eggs, shredded mozzarella, Parmesan, garlic powder, oregano, salt, and pepper. Stir thoroughly until the ingredients are well combined, and the rice is evenly coated with eggs and cheese, creating a sticky, cohesive mixture for the crust.

  3. Transfer the rice mixture to the lined baking sheet or pizza pan. Use your hands or a spatula to press it down evenly into a round or square pizza crust shape, about 1/2 inch thick.

  4. Drizzle a little olive oil over the rice crust and bake for 15-20 minutes, or until it becomes golden and crispy around the edges.

  5. Remove the crust from the oven. Spread a layer of pizza sauce over the crust, then add your favorite toppings (e.g., sliced peppers, olives, mushrooms, or even some leftover vegetables). Sprinkle a bit more mozzarella or your favorite cheese on top.

  6. Place the pizza back into the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly.

  7. Remove the pizza from the oven and garnish with fresh basil leaves if desired. Slice and serve hot!

Tips & Tricks

  1. Ensure the rice is slightly ground but not turned into a paste for the best crust texture.

  2. Feel free to use any leftover vegetables as toppings to reduce food waste.
