Dough
- 2cupsall-purpose flour
- 1tbspsemolina (rava)
- 2tbspbutter (softened)
- 2tbspsugar (powdered)
- 1/4cupcoconut milk (or regular milk)
- 1/4tspsalt
- 1/2tspbaking powder
- 1tspvanilla extract
For Frying and Coating
- Oil for deep frying
- 1/2cuppowdered sugar for coating
How to make Goan Kulkuls
Prepare the Dough
Mix flour, semolina, sugar, salt, and baking powder in a large bowl.
Add the butter and rub it into the dry ingredients using your fingers until it resembles breadcrumbs.
Slowly add coconut milk and vanilla extract. Knead the mixture into a soft, smooth dough.
Cover the dough and let it rest for about 30 minutes.
Shape the Kulkuls
Roll a small piece of dough into a small ball (the size of a marble).
Flatten the ball slightly and place it on the back of a fork.
Gently press and roll it downwards to create a curled, ridged shape.
Repeat this with the rest of the dough.
Fry the Kulkuls
Heat oil in a deep pan over medium heat.
Fry the kulkuls in small batches until they turn golden brown and crispy.
Remove them with a slotted spoon and place them on a paper towel to drain excess oil.
Coat the Kulkuls
Once cooled, roll the kulkuls in powdered sugar for a sweet coating.
Serve and Enjoy
Store the kulkuls in an airtight container. They make a perfect Christmas snack and are great for sharing with friends and family!

You can add a bit of cardamom powder or nutmeg for extra flavor.
