Ingredients

Dough

  • 2cups
    all-purpose flour
  • 1tbsp
    semolina (rava)
  • 2tbsp
    butter (softened)
  • 2tbsp
    sugar (powdered)
  • 1/4cup
    coconut milk (or regular milk)
  • 1/4tsp
    salt
  • 1/2tsp
    baking powder
  • 1tsp
    vanilla extract

For Frying and Coating

  • Oil for deep frying
  • 1/2cup
    powdered sugar for coating

How to make Goan Kulkuls

Prepare the Dough

  1. Mix flour, semolina, sugar, salt, and baking powder in a large bowl.

  2. Add the butter and rub it into the dry ingredients using your fingers until it resembles breadcrumbs.

  3. Slowly add coconut milk and vanilla extract. Knead the mixture into a soft, smooth dough.

  4. Cover the dough and let it rest for about 30 minutes.

Shape the Kulkuls

  1. Roll a small piece of dough into a small ball (the size of a marble).

  2. Flatten the ball slightly and place it on the back of a fork.

  3. Gently press and roll it downwards to create a curled, ridged shape.

  4. Repeat this with the rest of the dough.

Fry the Kulkuls

  1. Heat oil in a deep pan over medium heat.

  2. Fry the kulkuls in small batches until they turn golden brown and crispy.

  3. Remove them with a slotted spoon and place them on a paper towel to drain excess oil.

Coat the Kulkuls

  1. Once cooled, roll the kulkuls in powdered sugar for a sweet coating.

Serve and Enjoy

  1. Store the kulkuls in an airtight container. They make a perfect Christmas snack and are great for sharing with friends and family!
