Ingredients

Main Ingredients

  • 300mL
    double cream
  • 50g
    dark chocolate (70% cocoa), finely chopped
  • 50g
    milk chocolate, finely chopped
  • 75g
    caster sugar
  • 1piece
    orange zest
  • 2tbsp
    freshly squeezed orange juice
  • 1tsp
    vanilla extract
  • 1pinch
    salt

For Garnish (Optional)

  • 1piece
    whipped cream
  • 1piece
    chocolate shavings
  • 1piece
    orange zest or candied orange peel

How to make Chocolate Orange Posset

Heat the Cream

  1. In a saucepan, pour the double cream and caster sugar. Place it over medium heat, stirring gently, until the sugar dissolves.

  2. Bring the mixture to a gentle boil, then let it simmer for 2-3 minutes.

Add the Chocolate

  1. Remove the saucepan from heat and immediately add the finely chopped dark and milk chocolate.

  2. Stir until completely melted and smooth.

Infuse the Orange Flavor

  1. Stir in the orange zest, freshly squeezed orange juice, vanilla extract, and a pinch of salt.

  2. Mix well to ensure the flavors blend perfectly.

Set the Posset

  1. Pour the mixture into small ramekins or dessert glasses.

  2. Allow them to cool at room temperature for about 10 minutes, then transfer them to the refrigerator to chill for at least 4 hours (or overnight) until fully set.

Garnish & Serve

  1. Once set, top with a dollop of whipped cream, chocolate shavings, and extra orange zest for a beautiful finish.

Tips & Tricks

  1. For a more intense orange flavor, add more orange zest.

  2. Ensure the chocolate is finely chopped for easier melting.
