Season with salt and pepper to taste, and mix until the filling is well-blended and creamy.
Prepare the Frosting
In another bowl, mix the cream cheese, mayonnaise, and lemon juice until smooth.
Add a pinch of salt and pepper to taste. This mixture will be used to frost the sandwich cake.
Assemble the Sandwich Cake
Place the first slice of bread on a large serving plate or tray.
Spread a layer of the chicken filling evenly on the bread.
Place another slice of bread on top, and continue layering with the filling until all the bread and filling are used. Make sure the top layer is a slice of bread.
Frost the Cake
Using a spatula, spread the cream cheese frosting evenly over the top and sides of the assembled bread layers, making it look like a cake.
Decorate
Garnish with sliced cucumbers, cherry tomatoes, radishes, or herbs around the sides and top to make it look festive and colorful.
Sprinkle fresh parsley or dill on top for extra flavor and a pop of green.
Chill and Serve
Place the sandwich cake in the refrigerator for at least 30 minutes to set.
When ready to serve, cut into slices like a regular cake and enjoy!
