Mushroom Curry Mix recipe

Ingredients

(1 serving = 1 cup)
  • 1 1/2cups
    sliced mushrooms
  • 1 1/2cups
    cooked broad beans
  • 1piece
    medium-sized onion, chopped
  • 1piece
    medium-sized tomato, chopped
  • 1clove
    garlic, chopped
  • 2tbsp
    coconut powder
  • 2tbsp
    nutritional yeast
  • 1tsp
    ginger powder
  • 1tbsp
    turmeric powder
  • 1/2tsp
    chopped pepper
  • 2tbsp
    coconut oil
  • 1sprig
    parsley
  • 1pinch
    salt

How to make Mushroom Curry Mix

  1. Heat coconut oil over medium heat.

  2. Add mushrooms and fry lightly.

  3. Add chopped onions, garlic, and pepper. Stir to combine flavors.

  4. Mix ginger powder, turmeric powder, coconut powder, and nutritional yeast in water. Stir into the mix.

  5. Add broad beans and mix well.

  6. Add tomatoes. Cover and allow flavors to simmer for 5 minutes over low heat.

Tips & Tricks

  1. For a spicier curry, add bell pepper, more hot pepper, your favorite spice. or a pinch of chili powder.
