Nigerian Chicken Stew

Delicious easy to make chicken stew is a combination of blended tomatoes, onions, pepper, ginger and garlic and it is usually served with a variety of meals like rice, spaghetti, beans, bread etc. It is a must in every Nigerian home.

Ingredients
- 1kgchicken
- Fresh tomatoes
- Fresh pepper (cayenne & bell pepper)
- 1large onions
- Salt
- Ground pepper
- Thyme
- Curry
- Nutmeg
- Vegetable oil
- Seasoning cube
How to make Nigerian Chicken Stew
Prepping the Chicken
Wash Chicken and place in a pot, add diced onions, 1 teaspoon black pepper, 1 ½ teaspoon salt, ½ teaspoon curry|thyme|nutmeg, 2 cubes seasoning cube,, grated ginger and garlic and one cup of water. Place on a stove and allow to cook for 15 minutes
Prepping the Veggies
Wash tomatoes, peppers and onions, ginger and garlic and place in a blender, add little water and blend till it's smooth
Cooking the stew
Pour the blended veggies in a clean pot and boil it for 15-20 means or until it becomes pasty the add vegetable oil and sliced onions and stir and allow to simmer for about 5 minutes. Then add salt, black pepper, curry, thyme, nutmeg and seasoning cube, stir and allow to simmer on low heat for 2 minutes. Next add the chicken stock and allow to simmer for 2-3 minutes then add the chicken and stir and allow to simmer for 10 minutes and voila!
Tips & Tricks
The amount of seasoning depends on the quantity of the veggies. I couldn't really quantify the amount of veggies I used so you can gradually add seasoning and taste it until you get you desired/preferred taste. Also if you want the stew to be spicy you use more cayenne
