How to make Classic Chinese Fried Rice
Cooking Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add diced onion and minced garlic; stir-fry until the onion is translucent.
Add mixed vegetables and stir-fry for 2-3 minutes.
Push the vegetables to the side and add a little more oil if needed.
Pour in beaten eggs and scramble until cooked through.
Mix the scrambled eggs with the vegetables.
Add cooked rice and stir-fry for 5-7 minutes, breaking up any clumps.
Add soy sauce, oyster sauce (if using), and sesame oil; stir-fry for 1 minute.
Season with salt and pepper to taste.
Transfer to a serving platter and garnish with chopped scallions if desired.
Tips & Tricks
Use day-old rice to prevent clumping.
Stir-fry quickly to prevent burning.
Adjust seasoning to taste.
