Thai Pineapple Fried Rice recipe

Ingredients

4 Servings
(1 serving = 1 bowl)
  • 1lb
    large shrimp, cleaned and deveined
  • 2piece
    eggs, beaten with a dash of salt
  • 1 1/2cups
    chopped fresh pineapple
  • 1piece
    red bell pepper, diced
  • 2tbsp
    olive oil, divided
  • 3/4cup
    chopped green onions
  • 2clove
    garlic, minced
  • 1/2cup
    unsalted cashews, chopped
  • 2cups
    cooked and chilled rice
  • 1tbsp
    soy sauce
  • 2tsp
    chili garlic sauce
  • 1piece
    small lime, halved
  • Salt, to taste

How to make Thai Pineapple Fried Rice

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

  2. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.

  3. In the same skillet, add the remaining 1 tablespoon of olive oil.

  4. Add the beaten eggs and scramble until fully cooked. Remove from skillet and set aside.

  5. Add the garlic and red bell pepper to the skillet. Sauté for about 2 minutes until fragrant.

  6. Stir in the pineapple, green onions, and cashews. Cook for another 2-3 minutes.

  7. Add the cooked rice, soy sauce, and chili garlic sauce. Stir well to combine.

  8. Return the cooked shrimp and scrambled eggs to the skillet. Mix everything together and cook for an additional 2-3 minutes until heated through.

  9. Season with salt to taste.

  10. Serve with lime halves on the side.

Tips & Tricks

  1. Use day-old rice for the best texture in fried rice.

  2. Adjust the amount of chili garlic sauce to your preferred spice level.
