How to make Sweet and Sour Spicy Soup
Preparation
Prepare all the ingredients by washing, peeling, and chopping them as needed.
Soak the vermicelli in water until softened, then drain and set aside.
Cooking
In a pot, heat some oil and sauté ginger, pickled garlic, lemongrass, galangal, kaffir lime leaves, shallots, and spicy red chili until fragrant.
Add the minced pork and cook until browned.
Pour in the chicken stock and bring to a boil.
Add the scallops, cabbage, and salty plums. Simmer until the scallops are cooked through.
Season the soup with white sugar, fish sauce, chicken powder, lime juice, and rock sugar. Adjust seasoning to taste.
