    onion (finely chopped)

    fresh chillies (finely chopped)

    Vegetable oil
  • 2tbsp
    Ghee

How to make Pulao Rice

Preparation

  1. Place the basmati rice in a large bowl, cover with tap water, then wash the rice by rubbing it between your hands. Wash until most of the starch is off the rice. Replace the water and wash again until the water becomes almost clear. Drain the water and set the washed rice aside.

Cooking the Rice

  1. Heat a large wok, add half of the vegetable oil, then the ghee. Add the whole spices, bay leaves, and chillies, and sauté for about 2 minutes.

  2. Add the chopped onions and cook until golden brown.

  3. Add the washed basmati rice, salt, and pepper. Stir until the rice is well combined with the spices and onions.

  4. Add a little water to the rice, so it can start to cook. Cover the rice with a lid. Once the water has absorbed, add more water and cover. Repeat until the rice is cooked and no liquid is visible. Be careful not to use too much water and at the same time not to burn the rice.

Preparing the Garnish

  1. Heat another pan, add the rest of the vegetable oil and add the half-ring onions. Add a little salt and pepper. Sauté until the onions are golden brown.

Serving

  1. Place the pulao rice into a serving dish and spread the sautéed onion half rings over the top. Garnish with coriander leaves.
