Crispy Beef Chow Mein

Ingredients
- 2 1/2cupBeef sirloin (cut into thin strips)
- 1cupAll purpose flour
- 3cupEgg noodles (cooked al dente)
- 1cupSpring onions (diagonally sliced)
- 1cupPak choi (diagonally sliced)
- 1cupCarrots (julienne)
- 2tbspGinger (minced)
- 1tspGarlic (minced)
- 1/2cupOyster sauce
- 1/2cupLight soy sauce
- 2tbspDark soy sauce
- 3tbspSesame oil
- 1/2cupHoney
- 2tbspSesame seeds
- 3cupVegetable oil
- Salt & pepper to taste
How to make Crispy Beef Chow Mein
Heat the vegetable oil until hot enough for deep frying.
Season the beef strips with a little salt and pepper. Coat the strips with the all-purpose flour, mix well, and ensure they are fully coated. Once the oil is hot, deep fry the coated beef strips in batches until golden brown. Set aside.
Heat a wok until smoking hot, add the sesame oil, then add the carrots and stir fry for 1 minute. Add half of the spring onions, then the cooked egg noodles.
Add the beef, ginger, garlic, oyster sauce, light soy sauce, dark soy sauce, and honey. Mix well and stir fry until everything is coated in the sauce. If the sauce is too thick, add a little water to loosen it up.
Turn off the heat, then add the pak choi and mix through.
Heat a small pan on medium heat. Add the sesame seeds and dry toast until golden brown. Remove and set aside.
Serve the chow mein into bowls, then garnish with some toasted sesame seeds and the rest of the spring onions.
Tips & Tricks
Make sure the oil is hot enough before frying the beef to ensure it becomes crispy.
You can add a little water to the sauce if it becomes too thick.
