Cashew Nut Chicken & Udon Noodle Stir Fry

A delicious stir fry featuring chicken, cashew nuts, and udon noodles, enhanced with a flavorful sauce.

- 2cupschicken breast fillets (strips)
- 1cupraw cashew nuts
- 2sachets Wok time udon noodles
- 1cupspring onions (diagonally sliced)
- 1tbspfresh ginger (minced)
- 1tspfresh garlic (minced)
- 2cupspak choi (diagonally sliced)
- 2tbspoyster sauce
- 3tbsplight soy sauce
- 1tbspsugar
- 1tspapple cider vinegar
- 2tbspvegetable oil
- 1piececoriander leaves for garnish
How to make Cashew Nut Chicken & Udon Noodle Stir Fry
Cooking Instructions
Heat a wok and add the vegetable oil.
Add the chicken strips and sauté until golden brown.
Add the spring onions and cashew nuts and sauté for another 2 minutes.
Add the udon noodles, oyster sauce, soy sauce, ginger, garlic, apple cider vinegar, and sugar.
Simmer until everything is coated with the sauce. Taste and adjust seasoning if needed.
Switch off the heat, then add the raw pak choi and mix through.
Serve with coriander as garnish.
Tips & Tricks
Ensure the wok is hot before adding the oil to achieve a good sear on the chicken.
Adjust the seasoning to your taste by adding more soy sauce or sugar if needed.
