Ingredients

Main Ingredients

  • 2cups
    chicken breast fillets (strips)
  • 1cup
    raw cashew nuts
  • 2
    sachets Wok time udon noodles
  • 1cup
    spring onions (diagonally sliced)
  • 1tbsp
    fresh ginger (minced)
  • 1tsp
    fresh garlic (minced)
  • 2cups
    pak choi (diagonally sliced)
  • 2tbsp
    oyster sauce
  • 3tbsp
    light soy sauce
  • 1tbsp
    sugar
  • 1tsp
    apple cider vinegar
  • 2tbsp
    vegetable oil
  • 1piece
    coriander leaves for garnish

How to make Cashew Nut Chicken & Udon Noodle Stir Fry

Cooking Instructions

  1. Heat a wok and add the vegetable oil.

  2. Add the chicken strips and sauté until golden brown.

  3. Add the spring onions and cashew nuts and sauté for another 2 minutes.

  4. Add the udon noodles, oyster sauce, soy sauce, ginger, garlic, apple cider vinegar, and sugar.

  5. Simmer until everything is coated with the sauce. Taste and adjust seasoning if needed.

  6. Switch off the heat, then add the raw pak choi and mix through.

  7. Serve with coriander as garnish.

Tips & Tricks

  1. Ensure the wok is hot before adding the oil to achieve a good sear on the chicken.

  2. Adjust the seasoning to your taste by adding more soy sauce or sugar if needed.
