    Phyllo Pastry Squares
  • 2piece
    egg whites
  • 1/2cup
    Blue Cheese (crumbled)
  • 1/2cup

  • 1/2cup
    Fig Preserve (chopped)

    Vegetable Oil

    Pepper

How to make Blue Cheese & Fig Phyllo Parcels

  1. Place one phyllo square in front of you, then dab a tiny bit of egg white onto the pastry square. Take another square and place it onto the first square, creating a 'star'. Keep the rest of the squares covered with a damp cloth or bowl to prevent them from drying out.

  2. Mix the feta cheese, blue cheese, and fig preserve together in a bowl. Season with pepper. Mix well, then using a teaspoon, place a little filling into the center of your phyllo star.

  3. Dab a few drops of the egg white around the filling to make the pastry stick. Fold the pastry corners inwards around the filling, creating a parcel or moneybag.

  4. Heat the vegetable oil in a small pot until hot enough for deep frying. Test with a tiny piece of pastry; if the oil bubbles, it is ready.

  5. Complete the other phyllo parcels while the oil is heating, then deep fry 3-4 at a time until golden brown. Rotate them with a slotted spoon so all sides turn golden brown. Remove from the oil and serve warm.

Tips & Tricks

  1. Keep the phyllo pastry covered with a damp cloth to prevent it from drying out.

  2. Ensure the oil is hot enough before frying to achieve a crispy texture.

  1. How can I make Blue Cheese & Fig Phyllo Parcels vegetarian-friendly?

To make these Blue Cheese & Fig Phyllo Parcels vegetarian-friendly, simply ensure that the cheeses you use are rennet-free. Additionally, you can replace the egg whites used for sealing the parcels with a mixture of water and cornstarch for a vegan alternative.

  2. What are some good substitutions for blue cheese in phyllo parcels?

If you're not a fan of blue cheese, you can substitute it with goat cheese or cream cheese for a milder flavor. Alternatively, a sharp cheddar or a tangy gorgonzola can also work well, depending on your taste preference. Just keep in mind that the flavor profile will change slightly.

  3. How should I store leftover Blue Cheese & Fig Phyllo Parcels?

To store leftover Blue Cheese & Fig Phyllo Parcels, allow them to cool completely, then place them in an airtight container. They can be refrigerated for up to 3 days. For best results, reheat them in the oven to maintain their crispiness, rather than using a microwave.

  4. What are some ideal side dishes to serve with Blue Cheese & Fig Phyllo Parcels?

To ensure your phyllo parcels are crispy, heat the vegetable oil to the right temperature before frying. Test the oil with a small piece of pastry; if it bubbles immediately, it's ready. Fry the parcels in small batches to avoid overcrowding, which can lower the oil temperature and result in soggy pastries.
