How to make BBQ Grilled Chicken Fillet, Roasted Potatoes & Glazed Carrots

Prepare Potatoes

Prepare Carrots

  1. Place the carrot batons into a pot with water, bring to a boil, and cook until half cooked. Then drain.

Grill Chicken

  1. Heat a griddle pan, add a little vegetable oil, then grill the chicken fillets on both sides until nearly cooked through. Add salt and pepper on both sides. Add the BBQ sauce and turn the chicken a few times so the sauce coats the chicken.

Roast Potatoes

  1. Heat a pot with vegetable oil on high heat until it bubbles. If the oil is smoking, turn down the heat. Add the cooked potato quarters and deep fry until golden brown. Remove from the oil and drain on kitchen towel to remove excess oil. Season with salt and pepper.

Glaze Carrots

  1. Heat a pan, add a little vegetable oil, then add the carrots. Add the sugar and salt and pepper. Sauté until the carrots are golden. They must be cooked but still a little crunchy.

Serve

  1. Serve the BBQ chicken breasts with roasted potatoes and carrots.

Tips & Tricks

  1. Ensure the oil is hot enough before adding potatoes to achieve a crispy texture.

  2. Do not overcook the carrots; they should remain slightly crunchy.

FAQS

  1. How do I ensure my BBQ grilled chicken fillets are juicy and flavorful?

To keep your BBQ grilled chicken fillets juicy, make sure to butterfly and halve the chicken breasts for even cooking. Grill them on a preheated griddle pan and baste with BBQ sauce while cooking. This will help lock in moisture and enhance the flavor.

  2. What are some good substitutions for the ingredients in BBQ grilled chicken with roasted potatoes and glazed carrots?

If you don't have chicken breast fillets, you can use thighs or even tofu for a vegetarian option. For the BBQ sauce, homemade or store-bought sauces work well. Instead of potatoes, you can use sweet potatoes or even cauliflower for a low-carb alternative. For the carrots, consider using green beans or bell peppers.

  3. How should I store leftover BBQ grilled chicken and sides?

To store leftovers, let the BBQ grilled chicken, roasted potatoes, and glazed carrots cool completely. Place them in airtight containers and refrigerate. They should be consumed within 3-4 days. You can also freeze the chicken and potatoes for up to 3 months, but the texture of the carrots may change upon thawing.

  4. What are some great side dishes to pair with BBQ grilled chicken fillets?

In addition to roasted potatoes and glazed carrots, consider pairing your BBQ grilled chicken with a fresh coleslaw, corn on the cob, or a simple green salad. These sides complement the smoky flavors of the chicken and add a refreshing contrast.

  5. Can I make BBQ grilled chicken fillets in advance for meal prep?

Yes, you can prepare BBQ grilled chicken fillets in advance. Cook the chicken as directed, then let it cool before storing it in the refrigerator. You can reheat it in the oven or on the grill before serving. This makes it a great option for meal prep, allowing you to enjoy a delicious meal throughout the week.
