Ingredients

  • 1L
    milk
  • 1/3cup
    almonds (blanched)
  • 1tbsp
    cream
  • 1tsp
    green cardamom powder
  • 3/4cup
    sugar
  • 2tbsp
    corn flour

How to make Malai Kulfi Ice Cream

  1. Take out 4 tbsp of milk from the 1 litre and set it aside for later use.

  2. Boil the remaining milk with cream.

  3. Grind the blanched almonds with 4 tbsp of the reserved milk to make a paste.

  4. Add the almond paste and cardamom powder to the boiling milk and cook until the milk reduces by half.

  5. Caramelize the sugar and add it to the milk mixture. Cook until the sugar is completely dissolved.

  6. Mix the corn flour with the remaining 4 tbsp of reserved milk. Gradually add this mixture to the milk, stirring continuously, and cook until it thickens.

  7. Let the mixture cool down completely.

  8. Once cooled, grind the mixture in a grinding machine until smooth.

  9. Pour the mixture into molds and freeze overnight.

  10. Garnish with crushed pistachios if desired and serve.

  1. Ensure the milk is reduced to half for a richer flavor.

  2. Caramelizing the sugar adds a deeper flavor to the kulfi.
