Cream of Chicken Soup with Garlic Croutons
A creamy and flavorful chicken soup served with crispy garlic croutons.
Ingredients
For Crispy Garlic Croutons
- 4piecebread slices
- 1/2tbspbutter
- 1/2tbspoil
- 1/4tbspgarlic, chopped
- 1pinchblack pepper
- 1pinchsalt
- 1pinchdried parsley
For Cream of Chicken Soup
- 1tbspbutter
- 1tbspoil
- 200gchicken with bones
- 1/2tbspgarlic, chopped
- 1/2pieceonion, chopped
- 2tbspall-purpose flour
- 1500mLwater
- 1/2tspdried thyme
- 1/2tspsalt
- 1/4tspwhite pepper powder
- 1/4tspblack pepper, crushed
- 100mLcream
- 2tbspbreadcrumbs, roasted
- 2tbspfresh parsley, chopped
How to make Cream of Chicken Soup with Garlic Croutons
For Crispy Garlic Croutons
Cut the sides of the bread and cut into small squares.
Heat oil and melt butter in a pan. Add garlic and sauté.
Add bread pieces and keep mixing. Sprinkle salt, pepper, and dried parsley. Toss until toasted.
For Cream of Chicken Soup
Heat oil and melt butter in a pot. Fry chicken until the color changes.
Add garlic and mix well for 2 minutes. Add onion and mix well.
Sprinkle all-purpose flour and cook for 2-3 minutes while mixing well.
Pour in water and let it boil. Mix and partially cover. Cook on low flame for 30 minutes.
Turn off the flame, debone the chicken, and blend the chicken along with the stock.
Turn on the flame and cook for 2-3 minutes.
Add dried thyme, salt, black and white pepper. Mix well and cook for 5 minutes.
Turn off the flame, pour in cream, and mix well. Turn on the flame, cook for a minute, and then garnish with croutons, roasted breadcrumbs, and parsley. Serve hot.
Tips & Tricks
If you do not have parsley substitute it to coriander for similar taste
For extra flavor, you can add a dash of nutmeg to the soup.
Ensure the bread is stale for the best crouton texture.
