Ingredients

For Crispy Garlic Croutons

  • 4piece
    bread slices
  • 1/2tbsp
    butter
  • 1/2tbsp
    oil
  • 1/4tbsp
    garlic, chopped
  • 1pinch
    black pepper
  • 1pinch
    salt
  • 1pinch
    dried parsley

For Cream of Chicken Soup

  • 1tbsp
    butter
  • 1tbsp
    oil
  • 200g
    chicken with bones
  • 1/2tbsp
    garlic, chopped
  • 1/2piece
    onion, chopped
  • 2tbsp
    all-purpose flour
  • 1500mL
    water
  • 1/2tsp
    dried thyme
  • 1/2tsp
    salt
  • 1/4tsp
    white pepper powder
  • 1/4tsp
    black pepper, crushed
  • 100mL
    cream
  • 2tbsp
    breadcrumbs, roasted
  • 2tbsp
    fresh parsley, chopped

How to make Cream of Chicken Soup with Garlic Croutons

For Crispy Garlic Croutons

  1. Cut the sides of the bread and cut into small squares.

  2. Heat oil and melt butter in a pan. Add garlic and sauté.

  3. Add bread pieces and keep mixing. Sprinkle salt, pepper, and dried parsley. Toss until toasted.

For Cream of Chicken Soup

  1. Heat oil and melt butter in a pot. Fry chicken until the color changes.

  2. Add garlic and mix well for 2 minutes. Add onion and mix well.

  3. Sprinkle all-purpose flour and cook for 2-3 minutes while mixing well.

  4. Pour in water and let it boil. Mix and partially cover. Cook on low flame for 30 minutes.

  5. Turn off the flame, debone the chicken, and blend the chicken along with the stock.

  6. Turn on the flame and cook for 2-3 minutes.

  7. Add dried thyme, salt, black and white pepper. Mix well and cook for 5 minutes.

  8. Turn off the flame, pour in cream, and mix well. Turn on the flame, cook for a minute, and then garnish with croutons, roasted breadcrumbs, and parsley. Serve hot.

Tips & Tricks

  1. If you do not have parsley substitute it to coriander for similar taste

  2. For extra flavor, you can add a dash of nutmeg to the soup.

  3. Ensure the bread is stale for the best crouton texture.
