Chicken Changezi recipe

Ingredients

For onion cashew paste

  • 1/2cup
    Onion, sliced
  • 1/4cup
    Cashew
  • 1 1/2tbsp
    Oil

For Chicken marination

  • 1/2kg
    Chicken
  • 1/2cup
    Yogurt
  • 1/2tbsp
    Red chilli powder
  • 1/2tsp
    Salt
  • 1/2tbsp
    Ginger garlic paste
  • 1/2tbsp
    Lemon juice
  • 1 1/2tbsp
    Oil (for frying)

For chicken changezi

  • 1/4cup
    Oil
  • 1cup
    Tomato puree
  • 1/2tbsp
    Ginger garlic paste
  • 1/2tbsp
    Red chilli powder
  • 1/4tbsp
    Kashmiri red chilli powder
  • 1/2tbsp
    Coriander powder
  • 1/2tsp
    Salt
  • 1/2cup
    Milk
  • 1/4cup
    Cream
  • 1/2tsp
    Kasuri methi
  • 1/2tsp
    Garam masala
  • 1tbsp
    Coriander leaves

How to make Chicken Changezi

Prepare onion cashew paste

  1. Heat oil and add onion and cashew. Fry until the onion softens.

  2. Cool the mixture, add to a blender, and blend well. Keep aside.

Marinate chicken

  1. Marinate chicken with yogurt, red chilli powder, salt, ginger garlic paste, and lemon juice for 15 minutes.

Cook chicken

  1. Heat oil and add marinated chicken. Cook on each side until golden. Keep aside.

Prepare chicken changezi

  1. Heat oil and add tomato puree and ginger garlic paste. Fry for 2 minutes.

  2. Add onion cashew paste and fry for 4 minutes.

  3. Add red chilli powder, Kashmiri chilli powder, salt, and coriander powder. Fry for a minute.

  4. Add milk and cook for 2 minutes.

  5. Add the cooked chicken and cook on low heat for 10 minutes. Cover and cook until chicken is done or oil separates.

  6. Add cream, kasuri methi, and garam masala. Cook for 2 minutes.

  7. Garnish with coriander leaves.

Tips & Tricks

  1. For a richer flavor, marinate the chicken for longer than 15 minutes.

  2. Adjust the spice levels according to your preference by varying the amount of red chilli powder.
