A rich and flavorful Indian chicken dish made with a creamy onion-cashew paste and aromatic spices.
Ingredients
For onion cashew paste
- 1/2cupOnion, sliced
- 1/4cupCashew
- 1 1/2tbspOil
For Chicken marination
- 1/2kgChicken
- 1/2cupYogurt
- 1/2tbspRed chilli powder
- 1/2tspSalt
- 1/2tbspGinger garlic paste
- 1/2tbspLemon juice
- 1 1/2tbspOil (for frying)
For chicken changezi
- 1/4cupOil
- 1cupTomato puree
- 1/2tbspGinger garlic paste
- 1/2tbspRed chilli powder
- 1/4tbspKashmiri red chilli powder
- 1/2tbspCoriander powder
- 1/2tspSalt
- 1/2cupMilk
- 1/4cupCream
- 1/2tspKasuri methi
- 1/2tspGaram masala
- 1tbspCoriander leaves
How to make Chicken Changezi
Prepare onion cashew paste
Heat oil and add onion and cashew. Fry until the onion softens.
Cool the mixture, add to a blender, and blend well. Keep aside.
Marinate chicken
Marinate chicken with yogurt, red chilli powder, salt, ginger garlic paste, and lemon juice for 15 minutes.
Cook chicken
Heat oil and add marinated chicken. Cook on each side until golden. Keep aside.
Prepare chicken changezi
Heat oil and add tomato puree and ginger garlic paste. Fry for 2 minutes.
Add onion cashew paste and fry for 4 minutes.
Add red chilli powder, Kashmiri chilli powder, salt, and coriander powder. Fry for a minute.
Add milk and cook for 2 minutes.
Add the cooked chicken and cook on low heat for 10 minutes. Cover and cook until chicken is done or oil separates.
Add cream, kasuri methi, and garam masala. Cook for 2 minutes.
Garnish with coriander leaves.
Tips & Tricks
For a richer flavor, marinate the chicken for longer than 15 minutes.
Adjust the spice levels according to your preference by varying the amount of red chilli powder.
