Aloo Matar Gajar (mixed vegetable)
A flavorful Pakistani dish made with potatoes, peas, and carrots cooked in a spiced tomato gravy.
Ingredients

- 1/2cupOnion (chopped)
- 1/2tbspGinger garlic paste
- 3/4tbspRed chili powder
- 1/4tspTurmeric powder
- 1/2tbspCoriander powder
- 1/2tspSalt
- 1/2cupTomato puree
- 1 1/2cupsPotato cubes
- 1cupPeas
- 1cupHot water
- 1cupCarrot (sliced)
- 1/2tspDried fenugreek
- Green coriander (chopped) for garnishing
How to make Aloo Matar Gajar (mixed vegetable)
Heat oil in a pan and add chopped onions. Cook until the onions are translucent.
Add ginger garlic paste and cook for a minute.
Add red chili powder, turmeric powder, coriander powder, and salt. Cook for another minute.
Add tomato puree and cook for 2-3 minutes.
Include potato cubes and peas, and mix well.
Pour 0.5 cup of hot water, cover, and cook until the potatoes are 80% done.
Add sliced carrots and mix well. Pour the remaining 0.5 cup of hot water, cover, and cook for 8-10 minutes or until fully done.
Lastly, add dried fenugreek and mix well. Garnish with chopped coriander leaves.

Adjust the amount of red chili powder according to your spice preference.
