Ingredients

  • 2tbsp
    Oil
  • 1/2cup
    Onion (chopped)
  • 1/2tbsp
    Ginger garlic paste
  • 3/4tbsp
    Red chili powder
  • 1/4tsp
    Turmeric powder
  • 1/2tbsp
    Coriander powder
  • 1/2tsp
    Salt
  • 1/2cup
    Tomato puree
  • 1 1/2cups
    Potato cubes
  • 1cup
    Peas
  • 1cup
    Hot water
  • 1cup
    Carrot (sliced)
  • 1/2tsp
    Dried fenugreek
  • Green coriander (chopped) for garnishing

How to make Aloo Matar Gajar (mixed vegetable)

  1. Heat oil in a pan and add chopped onions. Cook until the onions are translucent.

  2. Add ginger garlic paste and cook for a minute.

  3. Add red chili powder, turmeric powder, coriander powder, and salt. Cook for another minute.

  4. Add tomato puree and cook for 2-3 minutes.

  5. Include potato cubes and peas, and mix well.

  6. Pour 0.5 cup of hot water, cover, and cook until the potatoes are 80% done.

  7. Add sliced carrots and mix well. Pour the remaining 0.5 cup of hot water, cover, and cook for 8-10 minutes or until fully done.

  8. Lastly, add dried fenugreek and mix well. Garnish with chopped coriander leaves.

  1. Adjust the amount of red chili powder according to your spice preference.
