Ingredients

(1 serving = 1 roll)
  • Leftover mashed potatoes
  • 250g
    grated mozzarella cheese
  • Black pepper
  • 125g
    chorizo
  • 1/2
    onion
  • 1/2
    yellow bell pepper
  • 3
    garlic cloves
  • 2tbsp
    olive oil
  • 1tsp
    paprika
  • Parsley (handful)

How to make Stuffed Potato Roll with Chorizo

  1. Preheat oven to 180˚C.

  2. Sprinkle half of the mozzarella cheese on the parchment paper. Add mashed potatoes over the cheese. Press with a spoon or hands. Sprinkle black pepper and bake until golden.

  3. Fry chorizo, onion, bell pepper, & garlic for 10 min then add olive oil, paprika fry for another 5 min and add tomato sauce followed by parsley. Leave to simmer for 5 minute. Remove from the heat.

  4. Spread the mix evenly over the potato sheet. Roll and bake for 15 minutes.

  5. Garnish with parsley. Slice and enjoy.
