Himalayan Spice Crispy Potato

Ingredients
- 2tbspghee
- 2tbspfinely chopped garlic
- 1tbspJimboo (dry chives)
- 2tbspchopped green coriander
- 2tbspchopped spring onion
- 1/2kgmedium potatoes, halved and crispy fried after boiling
- 1tspchat masala (optional)
- 1tbspmedium spice chili flakes
- salt to taste
- 1tsptimoor powder (Sichuan pepper powder)
How to make Himalayan Spice Crispy Potato
Boil the medium potatoes with bay leaf, coriander seed, and salt.
After cooking, cut the potatoes in half and fry them in oil until crispy.
Let the fried potatoes rest in the refrigerator for 12 hours for extra crispiness.
After resting, fry the potatoes again in oil over medium heat.
Heat a frying pan with ghee, add garlic, and fry until golden brown.
Add Jimboo, chopped coriander, and chopped spring onion. Sauté until lightly crispy.
Add the potatoes and the mentioned spices. Toss for a few minutes and serve.
Tips & Tricks
Resting the fried potatoes in the refrigerator helps to make them extra crispy.
Adjust the amount of chili flakes and Sichuan pepper powder according to your spice preference.
