Tandoori Chicken Pizza recipe

Ingredients

Tomato Yogurt Curry

  • 1tsp
    olive oil
  • 1tsp
    garlic, minced
  • 1/2cup
    tomato, diced
  • 1tsp
    ginger, chopped
  • 1/8tsp
    cumin
  • 1tsp
    garam masala
  • 1/4tsp
    jalapeno, minced
  • 1/4cup
    chicken stock
  • 1/4cup
    plain yogurt
  • 1tsp
    cilantro, chopped
  • 1tbsp
    butter

Tandoori Chicken

  • 1tsp
    ginger, chopped
  • 1tsp
    garlic, minced
  • 1/2tsp
    jalapeno, minced
  • 2tbsp
    tandoori paste
  • 2tbsp
    plain yogurt
  • 2piece
    boneless chicken breasts
  • 1tbsp
    butter, melted

Pizza

  • 1piece
    pizza dough
  • 1/4cup
    tomato yogurt curry
  • 1/2piece
    small zucchini, sliced
  • 1/2piece
    small yellow squash, sliced
  • 1 1/2cups
    mozzarella cheese, shredded
  • 2tbsp
    cilantro, chopped
  • 1/2cup
    mango chutney

How to make Tandoori Chicken Pizza

Tomato Yogurt Curry

  1. Heat olive oil over medium heat.

  2. Add minced garlic and cook until translucent, about 1-2 minutes.

  3. Add diced tomato, chopped ginger, cumin, garam masala, minced jalapeno, chicken stock, and plain yogurt.

  4. Reduce heat and simmer until excess liquid evaporates, about 3 minutes.

  5. Turn off heat and quickly blend in chopped cilantro and butter. Set aside.

Tandoori Chicken

  1. Combine chopped ginger, minced garlic, minced jalapeno, tandoori paste, and plain yogurt.

  2. Coat boneless chicken breasts with the mixture (use plastic gloves to avoid staining hands).

  3. Pour melted butter over marinating chicken breasts and stir to coat well.

  4. Grill chicken for 5-7 minutes per side, then discard marinade.

  5. Remove chicken from grill, chill, and slice into 1/8-inch thick slices. Set aside in the refrigerator.

Pizza

  1. Preheat oven to 425°F (220°C).

  2. Prepare pizza dough according to the recipe.

  3. Spread tomato yogurt curry evenly over the prepared pizza dough within the rim.

  4. Place slices of zucchini and yellow squash over the sauce, without overlapping.

  5. Cover with shredded mozzarella cheese and distribute sliced tandoori chicken evenly.

  6. Transfer pizza to the oven and bake until crust is crisp and golden, and cheese is bubbly at the center, about 10-15 minutes.

  7. Carefully remove pizza from the oven and sprinkle chopped fresh cilantro over the top.

  8. Slice and serve with mango chutney.

Tips & Tricks

  1. Use plastic gloves to avoid staining hands when handling tandoori paste.

  2. Chill the grilled chicken before slicing for easier handling.
