Ingredients
- 200gmango, chopped
- 2tbspsugar
- 4tbspcornstarch (US) / corn flour (UK)
- 300mLmilk
- 100gvanilla cake or muffins (madeira cake aka loaf cake, pound cake)
- 200mLwhipping cream (minimum 33% fat)
- 2tbspsugar
- 100gfinely chopped mango
- mango cubes for decoration
How to make Mango Dessert Cups
In a blender, puree 200g of chopped mango with 2 tbsp of sugar until smooth.
In a saucepan, mix the cornstarch with a little bit of milk to make a smooth paste. Gradually add the remaining milk, stirring constantly.
Cook the mixture over medium heat until it thickens, stirring constantly.
Remove from heat and let it cool slightly.
Fold in the mango puree into the cooled mixture.
Crumble the vanilla cake or muffins into the bottom of each cup.
Pour the mango mixture over the crumbled cake.
In a separate bowl, whip the cream with 2 tbsp of sugar until stiff peaks form.
Fold in the finely chopped mango into the whipped cream.
