    pasta (penne or rigatoni)
  • 2cups
    marinara sauce
  • 1can
    diced tomatoes
  • 1piece
    zucchini, diced
  • 1piece
    yellow squash, diced
  • 1piece
    bell pepper, diced
  • 1piece
    onion, diced
  • 2clove
    garlic, minced
  • 1cup
    shredded mozzarella cheese
  • 1/2cup
    grated Parmesan cheese
  • 1tsp
    dried oregano
  • 1tsp
    dried basil
  • Salt and pepper to taste

How to make Vegetarian Pasta Bake

  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

  2. Cook the pasta according to package instructions until al dente. Drain and set aside.

  3. In a large skillet, heat some olive oil over medium heat. Add the garlic and onion and sauté until fragrant, about 2-3 minutes.

  4. Add the zucchini, yellow squash, and bell pepper to the skillet and cook until they start to soften, about 5-6 minutes.

  5. Stir in the marinara sauce, diced tomatoes, oregano, basil, salt, and pepper. Let the sauce simmer for 5-10 minutes.

  6. Add the cooked pasta to the skillet and mix everything together until well combined.

  7. Pour the pasta mixture into the prepared baking dish and spread it out evenly.

  8. Sprinkle the mozzarella and Parmesan cheese on top of the pasta.

  9. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.

  10. Let the pasta bake cool for a few minutes before serving. Enjoy!
