- 5pieceMushrooms, diced
- 1/2pieceLime, juiced
- Fresh Cilantro, to taste
- Taco Seasoning, to taste
- 1/4cupQueso Fresco
- Hot Sauce, to taste
- Vegan Chicken Strips, to taste
How to make Vegan Chicken Street Tacos
Prepare the Filling
Toss the pinto beans, taco seasoning, lime juice, diced zucchini, and diced mushrooms in a bowl and mix well.
Cook the Filling
Cook the mixture in a pan with vegan chicken strips for about 5 minutes on medium to medium-high heat.
Assemble the Tacos
Lay out the street taco tortillas and divide the mixture evenly on top of each tortilla.
Garnish with fresh cilantro, queso fresco, diced avocado, and hot sauce. Fold in half and serve.
Tips & Tricks
For extra flavor, add a pinch of smoked paprika to the taco seasoning.
Warm the tortillas slightly before assembling to make them more pliable.
