Vegan Black Bean and Corn Burritos

A delicious and filling vegan burrito with black beans, corn, and a variety of flavorful toppings.

Ingredients
For the black beans and corn
- 1canblack beans
- 1cansweet corn
- 1tsppaprika powder
- 1/2tspsmoked paprika powder
- 1tspcumin
- 2tspfresh lime juice
- 2piecegreen onions, cut into rings
- 1/2cupfreshly chopped cilantro
- salt, to taste
- black pepper, to taste
For the filling
- 1cupguacamole
- 1cupsalsa
- 3/4cupvegan sour cream
- 1/2cupvegan shredded cheese
- 3cupsshredded lettuce
- 3cupscooked brown rice, seasoned with salt and 1 tsp of cumin
- 6piecelarge flour tortillas
How to make Vegan Black Bean and Corn Burritos
Prepare the black beans and corn
Drain and rinse the black beans and the corn.
In a medium bowl, combine them with the paprika powder, cumin, smoked paprika powder, lime juice, salt, and pepper.
Add the chopped green onions and the fresh cilantro and stir well.
Assemble the burritos
Lay a tortilla flat on a plate.
Add some rice in the center of the tortilla.
Add some of the bean corn salad on top.
Add salsa, lettuce, vegan cheese, vegan sour cream, and avocado.
If desired, sprinkle some red pepper flakes on top.
Fold in the sides and then roll the burrito up and wrap it in foil.
Cut it in half with a sharp knife.
Tips & Tricks
For extra flavor, try adding a dash of hot sauce to the filling.
Use gluten-free tortillas if needed to make the recipe gluten-free.
