Vegan Black Bean and Corn Burritos recipe

Ingredients

6 Servings
(1 serving = 1 burrito)

For the black beans and corn

  • 1can
    black beans
  • 1can
    sweet corn
  • 1tsp
    paprika powder
  • 1/2tsp
    smoked paprika powder
  • 1tsp
    cumin
  • 2tsp
    fresh lime juice
  • 2piece
    green onions, cut into rings
  • 1/2cup
    freshly chopped cilantro
  • salt, to taste
  • black pepper, to taste

For the filling

  • 1cup
    guacamole
  • 1cup
    salsa
  • 3/4cup
    vegan sour cream
  • 1/2cup
    vegan shredded cheese
  • 3cups
    shredded lettuce
  • 3cups
    cooked brown rice, seasoned with salt and 1 tsp of cumin
  • 6piece
    large flour tortillas

How to make Vegan Black Bean and Corn Burritos

Prepare the black beans and corn

  1. Drain and rinse the black beans and the corn.

  2. In a medium bowl, combine them with the paprika powder, cumin, smoked paprika powder, lime juice, salt, and pepper.

  3. Add the chopped green onions and the fresh cilantro and stir well.

Assemble the burritos

  1. Lay a tortilla flat on a plate.

  2. Add some rice in the center of the tortilla.

  3. Add some of the bean corn salad on top.

  4. Add salsa, lettuce, vegan cheese, vegan sour cream, and avocado.

  5. If desired, sprinkle some red pepper flakes on top.

  6. Fold in the sides and then roll the burrito up and wrap it in foil.

  7. Cut it in half with a sharp knife.

Tips & Tricks

  1. For extra flavor, try adding a dash of hot sauce to the filling.

  2. Use gluten-free tortillas if needed to make the recipe gluten-free.
