How to make Vegan Apple Cinnamon Cake
Preparation
Preheat the oven to 350 degrees F (180 degrees C).
In a bowl, whisk together egg whites, soy yogurt, and granulated erythritol.

Add lupin bean flour, soy flour, coconut flour, ground cinnamon, baking powder, and salt. Stir to combine. The batter will be quite runny.
Gently stir in the thinly sliced apple.
Baking
Pour the batter into a baking pan lined with parchment paper. Decorate the top with extra slices of apple and a bit of granulated erythritol.
Bake in the preheated oven for about 45 minutes. Check if the cake is cooked through by inserting a toothpick into the center; it should come out clean.
Let the cake cool down completely before removing it from the pan.
