Crispy and golden vegan hush puppies made in an air fryer, perfect as a snack or side dish.
Ingredients
- 1cupdry uncooked polenta or coarsely ground cornmeal
- 1cupgluten-free all purpose flour
- 2tbsptapioca starch
- 1 1/2tspsea salt
- 1tspbaking powder
- 1tsppsyllium husk powder
- 1/4tspbaking soda
- 1/8tspground cayenne
- 1/2piecemedium white or yellow onion, finely diced
- 1canfull fat coconut milk
- 2tspapple cider vinegar
- 1tspmaple syrup
- 4tbspplant-based butter, chopped
How to make Vegan Air Fryer Hush Puppies
Preheat the air fryer to 390°F. Grease the air fryer basket or tray and set aside.
In a large mixing bowl, add polenta, flour, starch, salt, baking powder, psyllium husk powder, baking soda, and cayenne. Mix well.
Fold in the diced onion. Finely dice 1/2 an onion.
To the dry mixture, add coconut milk, vinegar, and maple syrup. Mix all together well.
Gently fold in the chopped butter.
Use a tablespoon to scoop out rounded mounds of batter from the bowl, approximately golf ball-sized.
With wet hands, roll the batter into smooth balls of dough.
Place each dough ball into the greased air fryer basket or tray, ensuring none are touching each other.
Air fry at 390°F for 12-15 minutes, or until all hush puppies are turning crisp and golden.
Let cool for a few minutes before serving. Enjoy!
Tips & Tricks
Ensure your hands are wet when rolling the dough to prevent sticking.
For a non-vegan version, you can substitute coconut milk with buttermilk and plant-based butter with regular butter.
