How to make Vegan Air Fryer Hush Puppies
Preheat the air fryer to 390°F. Grease the air fryer basket or tray and set aside.
In a large mixing bowl, add polenta, flour, starch, salt, baking powder, psyllium husk powder, baking soda, and cayenne. Mix well.
Fold in the diced onion. Finely dice 1/2 an onion.
To the dry mixture, add coconut milk, vinegar, and maple syrup. Mix all together well.
Gently fold in the chopped butter.
Use a tablespoon to scoop out rounded mounds of batter from the bowl, approximately golf ball-sized.
With wet hands, roll the batter into smooth balls of dough.
Place each dough ball into the greased air fryer basket or tray, ensuring none are touching each other.
Air fry at 390°F for 12-15 minutes, or until all hush puppies are turning crisp and golden.
Let cool for a few minutes before serving. Enjoy!

Ensure your hands are wet when rolling the dough to prevent sticking.
For a non-vegan version, you can substitute coconut milk with buttermilk and plant-based butter with regular butter.
FAQS
Can I use regular flour instead of gluten-free flour?
Yes, you can use regular all-purpose flour instead of gluten-free flour if you are not following a gluten-free diet.
What can I substitute for coconut milk?
You can substitute coconut milk with any plant-based milk, such as almond milk or soy milk, but keep in mind that it may alter the flavor slightly.
How do I know when the hush puppies are done cooking?
The hush puppies are done when they are crisp and golden brown on the outside. You can also check by inserting a toothpick; it should come out clean.
Can I make the batter ahead of time?
It's best to make the batter fresh, as it may lose its texture and rise if left to sit for too long. However, you can prepare the dry ingredients in advance and mix them with wet ingredients just before cooking.
What can I serve with vegan hush puppies?
Vegan hush puppies pair well with a variety of dips such as vegan tartar sauce, hot sauce, or a simple avocado dip. They can also be served as a side dish with salads or soups.
