- 3tbspOlive Oil
- 4cupsSweet Potatoes, peeled, grated
- 1tspChili Powder
- 1tspGround Cumin
- 1pinchCayenne Pepper
- 1cupSharp Cheddar Cheese, grated
- 8pieceWhite Corn Tortillas
To Taste
- Salt
- Ground Black Pepper
- Lime Juice, freshly squeezed
- Salsa
- Sour Cream
How to make Sweet Potato and Cheese Quesadillas
In a large pan set over medium heat, sauté the onions and garlic in olive oil until the onions are translucent.
Add the sweet potatoes, chili powder, ground cumin, and cayenne pepper. Cook, covered, for about 10 minutes, stirring every few minutes.
When the sweet potato is tender, add salt and ground black pepper. Remove the pan from the heat. Sprinkle lime juice over the sweet potatoes, mix, taste, and adjust with more lime and salt if needed.
Spread 1/8th of the filling over each tortilla. Top with sharp cheddar cheese.
Bake in a 350 degrees F (180 degrees C) oven until the cheese is fully melted and the sweet potatoes and tortillas are hot, approximately 15 minutes.
Remove the pan from the oven, and fold each tortilla in half. Serve with more lime juice, sour cream, and salsa on the side.
Tips & Tricks
For a spicier version, add more cayenne pepper.
You can substitute sharp cheddar cheese with Monterey Jack for a different flavor.
