- 1cupChicken Stock
- 1tbspUnsalted Butter
- 1tbspUnbleached All-Purpose Flour
- 1cupMilk
- 1cupAged Cheddar Cheese, shredded
- 1cupBroccoli, chopped
How to make Quinoa and Broccoli Casserole
Rinse and drain the quinoa to wash away the bitter outer shell. Use chicken stock to cook it on the stovetop or in a rice cooker.
In a pan, melt the unsalted butter on low heat.
Whisk in the unbleached all-purpose flour for 1-2 minutes to draw out the raw flour taste.
Slowly pour in the milk. Increase the heat to medium and whisk constantly to prevent lumps. As it cooks, it will thicken.
Stir in the aged cheddar cheese.
Add the broccoli.
Add the cooked quinoa and mix well.
Transfer to a casserole dish and cover with more cheese.
Cover with foil and bake at 350 degrees F (180 degrees C) for 20-30 minutes or until the cheese is melted.

Ensure the quinoa is well-rinsed to remove its natural bitterness.
