How to make Mediterranean Baked Chicken Thighs

Preparation

  1. Season the chicken thighs with thyme, rosemary, oregano, salt, and pepper.

  2. Preheat the oven to 375 degrees F (190 degrees C).

Cooking

  1. Heat olive oil in a cast iron skillet over medium-high heat. Once hot, place the chicken skin side down until golden brown for 4-5 minutes.

  2. Flip the chicken and continue cooking for 5 more minutes until lightly browned. Remove the chicken and set aside.

  3. In the same skillet, add garlic and cook until fragrant. Add white wine, chicken broth, and lemon juice. Cook until reduced by half.

  4. Add red onion, artichoke hearts, cherry tomatoes, bell pepper, sun-dried tomatoes, rosemary, basil, parsley, oregano, red pepper flakes, lemon zest, honey, salt, and pepper. Stir and cook for about 3-5 minutes.

  5. Place the chicken back in the pan. Add kalamata olives, green olives, and thyme. Transfer to the oven and bake for about 15 minutes or until the chicken is cooked through.

  6. Remove from the oven. Garnish with parsley. Serve hot with feta cheese, more lemon zest, and a baguette.

  1. Ensure the chicken is patted dry before seasoning to achieve a crispy skin.

  2. Adjust the amount of crushed red pepper flakes to your spice preference.
