    Fresh Rosemary
  • 1/2cup
    Italian Flat-Leaf Parsley
  • 4tsp
    Capers
  • 2piece
    Green Chili Peppers
  • 1/2cup
    Extra-Virgin Olive Oil
  • 1piece
    Lemon, juiced and zested
  • 2clove
    Garlic
  • Coarse Sea Salt, to taste
  • Coarse Black Pepper, to taste

    Horse Mackerel (9 oz), washed

How to make Grilled Horse Mackerel with Salsa Verde

Prepare the Salsa Verde

  1. Finely chop the fresh rosemary and Italian flat-leaf parsley and add to a mixing bowl.

  2. Finely chop the capers, green chili peppers, and garlic, then add to the herbs.

  3. Add the extra-virgin olive oil, lemon zest, and juice. Combine the salsa verde, adding more olive oil if necessary. Season with coarse sea salt and coarse black pepper.

Prepare and Grill the Fish

  1. Arrange the cleaned horse mackerel in a large dish and spoon a little of the salsa verde over, ensuring each fish is coated.

  2. Oil a grid and grill the horse mackerel over medium coals for about 3–4 minutes per side. Use a small brush or sprig of rosemary to baste the cavity of each fish with salsa verde.
