Marinade

  • 1/3cup
    Extra-Virgin Olive Oil
  • 1/4cup
    Apple Cider Vinegar

    Red Fresno Chili Peppers, crushed

    Scallions, roughly chopped
  • 1/2tbsp

Chimichurri Sauce

  • 3/4cup
    Italian Flat-Leaf Parsley, chopped
  • 1/2cup
    Extra-Virgin Olive Oil

    Garlic, minced

    Lemon, juiced
  • 2piece
    Red Chili Peppers, optional
  • 1tbsp
    Fresh Oregano, finely chopped
  • 1tsp
    Sea Salt

How to make Grilled Flank Steak with Chimichurri Sauce

Marinating the Steak

  1. In a shallow dish, combine extra-virgin olive oil, apple cider vinegar, crushed red Fresno chili peppers, crushed garlic, scallions, sea salt, and ground black pepper.

  2. Place the flank steak in the marinade, turning to coat well on all sides. Cover and refrigerate overnight, turning the steak every few hours.

Grilling the Steak

  1. Heat a grill to very high heat, around 450 degrees F (230 degrees C).

  2. Shake the excess marinade from the steak and place the steak directly on the grill.

  3. Cook for 4 minutes, rotate 45 degrees and cook for another 3 minutes.

  4. Flip and repeat, cooking for 4 minutes, rotating and another 3 minutes.

  5. Remove the flank steak from the grill and cover with foil. Let rest for 15 minutes.

Preparing the Chimichurri Sauce

  1. Combine Italian flat-leaf parsley, extra-virgin olive oil, minced garlic, lemon juice, optional red chili peppers, fresh oregano, sea salt, and ground black pepper in a bowl or jar.

  2. Let rest at room temperature for at least 30 minutes.
